How to Make It
Halve all passion fruits and scoop the pulp and seeds into a sieve over a bowl. Press through the sieve with a spoon to extract the juice, leaving seeds behind. Reserve 1 tbsp of seeds for garnish โ they are edible and beautiful.
Add passion fruit juice, orange juice, frozen banana, frozen mango, and ice to the blender. Blend on high for 60 seconds until completely smooth and light in colour.
Taste before adding honey. Passion fruit is naturally very tart โ the amount of honey needed depends entirely on the ripeness of your fruit. Add 1 tbsp, blend, taste, repeat.
Pour into tall, clear glasses to show the golden colour. Top with reserved passion fruit seeds, a slice of orange, and a sprig of mint. The seeds on top signal to the drinker: this is the real thing.
